Our selected Guest Chef will travel to Peru to cook for a Zephyr Adventures group on the four-day Inca Trail trip. If you are thinking you will head there to teach the locals a few things about international cuisine, you had better think again!
Conditions on the Inca Trail will be primitive. All you have available is a gas stove. Your refrigerator is a cold-running stream. And your light will be a swaying lantern hung from the roof of the cooking tent.
You will, however, be teamed with a professional Peruvian cook experienced in the ways of dishing out food three times a day -- on time and delicious -- for 15 ravenous hikers. Not to worry, our cook will either speak English or we'll have a translator for you, so this experience will be as much about learning as it is about teaching.
You'll meet your Peruvian counterpart when you arrive and draw up a menu based on Peruvian ingredients. You'll visit the colorful local markets and purchase the necessary supplies. This may include items such as potatoes, corn, avocado, exotic fresh fruits, lamb, chicken and even guinea pig! You will also need to stock up on all sorts of interesting and fresh spices and salsas that so enliven the Peruvian cuisine. You may even whip up a local specialty such as the "Pachamanca" earth pot. And of course, you will share some of your favorite recipes from home -- signature dishes which are all your own --with our ravenous tour group.
